Stir fried leeks – A tasty vegetarian dish for cold winter days

Ingredients
8 small or 4 large leeks
675 g mushrooms
50g butter or 2 tbsp olive oil
Half a teaspoonful (tsp)of raw brown sugar
Half a teaspoonful of turmeric
1 tsp ground ginger
4 tablespoons (tbsp) flour
200 ml vegetable stock
Method
Clean and slice the leeks and slice the mushrooms. Melt the butter or heat the oil in a large frying pan or wok. Add the leeks and mushrooms and stir constantly over a high heat until the vegetables are just tender. Add the sugar and spices to the stock, sprinkle the flour over the vegetables then add the flavoured stock. Bring to the boil, reduce heat and simmer for 5 minutes.
Serve with penne pasta.
